Chemical properties White to light brown powder. Unmilled Indian gums are amorphous droplets of different sizes, or broken into irregular pieces. Light to dark brown. Sometimes mixed with darker bark crumbs and small pieces. (This type of raw material needs to be cleaned before it is used in foods).

Some products are gray to reddish gray powder. Odorless or slightly smelly. Mild taste.

Indian gum is 90% soluble in water and the soluble fraction has a molecular weight of approximately 12 000 (measured by osmotic pressure). Soluble in 5 times the amount of water to form a high-viscosity colloid. Insoluble in 90% ethanol. The viscosity of the aqueous solution is greater than that of gum arabic, but the adhesiveness is small. Buffering, no change in pH value in the presence of a small amount of acid and base.

 

Use Thickener; Stabilizer; Coating agent; Emulsifier.
